  • 2 cups Shredded Chicken Use leftover chicken

  • 1 packet Instant Ramen Crushed for crunch
  • 1 cup Shredded Carrot Fresh or pre-packaged
  • 3 tablespoons Sliced Green Onions Skip if desired
  • 1/2 cup Sliced Almonds Or cashews for a change
For the Dressing
  • 1/4 cup Rice Wine Vinegar Or apple cider vinegar
  • 2 tablespoons Honey Use maple syrup for vegan
  • 2 tablespoons Sesame Oil Or olive oil
  • 2 tablespoons Hoisin Sauce Or soy sauce
  • 2 tablespoons Soy Sauce Low-sodium preferred
  • 1 tablespoon Minced Ginger Fresh preferred
  • 1 clove Minced Garlic Fresh works best
  • 1/4 cup Vegetable Oil Any neutral oil

Method
 

Prep Ingredients
  1. Gather all your ingredients, chop the romaine lettuce, shred the cabbage and chicken, grate the carrot, and slice the green onions.
Assemble Salad
  1. In a large bowl, combine the chopped romaine, shredded red cabbage, and shredded chicken along with mandarin oranges, crushed ramen, carrot, green onions, and almonds. Toss gently.
Make Dressing
  1. In a small bowl, whisk together the dressing ingredients and gradually drizzle in vegetable oil while whisking until emulsified.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently just before serving.
