  • 1 tsp Salt
For the Decoration
  • 250 g Marzipan Roll out for a smooth finish.
  • 250 g Fondant Use on its own for a simpler look.

Method
 

Step-by-Step Instructions
  1. Soak the dried mixed fruit in brandy for at least a few hours, ideally overnight.
  2. In a large mixing bowl, beat unsalted butter and granulated sugar until light and fluffy, about 4–5 minutes.
  3. Incorporate the eggs one at a time, mixing well for about 30 seconds after each addition.
  4. Whisk together the all-purpose flour, baking powder, and salt in a separate bowl.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently mix the soaked dried fruit into the batter until evenly distributed.
  7. Pour the batter into a greased and lined baking tray, smooth out the top.
  8. Preheat the oven to 160°C (320°F) and bake for about 1 hour.
  9. Allow to cool completely in the tray before transferring to a wire rack.
  10. Decorate with rolled-out marzipan and fondant as desired.
