- Soak the dried mixed fruit in brandy for at least a few hours, ideally overnight.
- In a large mixing bowl, beat unsalted butter and granulated sugar until light and fluffy, about 4–5 minutes.
- Incorporate the eggs one at a time, mixing well for about 30 seconds after each addition.
- Whisk together the all-purpose flour, baking powder, and salt in a separate bowl.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently mix the soaked dried fruit into the batter until evenly distributed.
- Pour the batter into a greased and lined baking tray, smooth out the top.
- Preheat the oven to 160°C (320°F) and bake for about 1 hour.
- Allow to cool completely in the tray before transferring to a wire rack.
- Decorate with rolled-out marzipan and fondant as desired.
