Method
 

Preparation Instructions
  1. In a mixing bowl, combine graham cracker crumbs and melted unsalted butter. Press into tartlet pans and chill for at least 20 minutes.
  2. Melt chopped white chocolate over a double boiler until smooth, about 5-7 minutes, then let cool slightly.
  3. Whip heavy whipping cream until soft peaks form, about 3-5 minutes. Be careful not to overwhip.
  4. Beat softened cream cheese and powdered sugar until smooth. Fold in melted white chocolate and then gently add whipped cream.
  5. Spoon or pipe mousse into chilled crusts. Smooth tops and chill for at least 1 hour.
  6. Top with fresh raspberries, drizzle caramel sauce, and optionally add edible flowers before serving.
