- Preheat your oven to 350°F (175°C) and prepare an 8 x 5 inch loaf pan by greasing it.
- In a small bowl, whisk together ½ cup of brown sugar and 1½ teaspoons of ground cinnamon until combined.
- In a larger bowl, crack in 2 large eggs and add ½ cup of granulated sugar. Whisk until light and fluffy, about 2-3 minutes.
- Gently fold in ½ cup of melted butter and 1 teaspoon of vanilla extract until smooth.
