- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice blanched almonds in half lengthwise and set aside.
- In a food processor, combine almond flour and powdered sugar until free of lumps.
- Add salt, egg whites, almond extract, and optional rose water to the processor and blend until you have a soft dough.
- Blend in additional powdered sugar and almond flour with one egg white to form the marzipan filling.
- Shape the marzipan dough into small balls, about 1 inch in diameter.
- Press three almond halves onto each cookie ball as decoration.
- Whisk together the reserved egg yolk and splash of water, and lightly brush this mixture onto the cookies.
- Bake the cookies for 15 to 18 minutes until pale gold and slightly dry on top.
- Let the cookies cool on a rack before serving.
