Step-by-Step Instructions for Taco Casserole
- Preheat your oven to 350°F (175°C). Spray a 13x9 inch baking dish with nonstick cooking spray.
- In a large skillet, cook 1 pound of ground beef with 1 finely chopped onion over medium-high heat for about 5-7 minutes.
- Stir in 1 packet of taco seasoning and ½ cup of water. Bring to a gentle boil for 2-3 minutes.
- Lower the heat and add 1 can of drained black beans and 1 can of diced tomatoes with green chiles. Stir in ½ cup of sour cream and cook for an additional 8-10 minutes.
- Layer Fritos corn chips in the baking dish, top with 1 cup of shredded cheese followed by the beef mixture, and finish with the remaining cheese.
- Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 5 minutes until cheese is bubbling.
- Add optional toppings before serving, like more Fritos, jalapeños, green onions, or guacamole.
