Step-by-Step Instructions for Taco Casserole
  1. Preheat your oven to 350°F (175°C). Spray a 13x9 inch baking dish with nonstick cooking spray.
  2. In a large skillet, cook 1 pound of ground beef with 1 finely chopped onion over medium-high heat for about 5-7 minutes.
  3. Stir in 1 packet of taco seasoning and ½ cup of water. Bring to a gentle boil for 2-3 minutes.
  4. Lower the heat and add 1 can of drained black beans and 1 can of diced tomatoes with green chiles. Stir in ½ cup of sour cream and cook for an additional 8-10 minutes.
  5. Layer Fritos corn chips in the baking dish, top with 1 cup of shredded cheese followed by the beef mixture, and finish with the remaining cheese.
