Step-by-Step Instructions
  1. In a bowl, combine lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and pepper. Marinate the chicken thighs for 15-30 minutes.
  2. Heat a skillet over medium-high heat, add avocado oil, then sear the marinated chicken for 8-10 minutes on each side until cooked through. Remove and rest before slicing.
  3. In a bowl, mix together corn kernels, diced red onion, sour cream, mayonnaise, Cotija cheese, chili powder, salt, pepper, and lime juice until combined.
  4. Heat the prepared rice in a pot over low heat, add lime juice, and fluff with a fork.
