  • 1 teaspoon Pepper
For Garnishing
  • 1/4 cup Cilantro (Fresh) Chopped, for garnish.
  • 2 pieces Lime Wedges For serving.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together maple syrup, soy sauce, sriracha, minced garlic, and optional chili flakes.
  3. Season both sides of the chicken breasts with salt and pepper. Sear the chicken for 2-3 minutes on each side in hot olive oil.
  4. Transfer the chicken to a baking dish and pour the marinade over it.
  5. Bake the chicken for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  6. In a saucepan, combine jasmine rice, coconut milk, chicken broth, and a pinch of salt. Bring to a boil, then simmer for 18-20 minutes.
  7. Let the chicken rest for a few minutes after baking.
  8. Fluff the coconut rice and serve alongside the chicken, garnished with cilantro and lime wedges.
