  1. Preheat your oven to 400°F (200°C) or air fryer to 375°F (190°C).
  2. Remove any damaged outer leaves from the cabbage and slice it into ¾-inch thick steaks.
  3. Combine olive oil with garlic powder, smoked paprika, onion powder, thyme, salt, and black pepper in a mixing bowl.
  4. Generously coat both sides of each cabbage steak with the seasoning mixture.
  5. Arrange the seasoned cabbage steaks on a baking sheet lined with parchment paper and roast for 25–30 minutes, flipping halfway through.
  6. For air fryer, place the coated cabbage steaks in a single layer and cook for 10–15 minutes, flipping halfway through.
