  • 1 cup All-Purpose Flour or almond flour for gluten-free
  • 3 large Eggs or flax eggs for vegan
  • 1 tablespoon Baking Powder
For the Blueberry Glaze
  • 1/2 cup Blueberry Juice fresh from blended berries
  • 1 tablespoon Cornstarch or arrowroot powder for substitution
For Decoration
  • 1 cup Edible Flowers like pansies or violets
  • 1 tablespoon Lemon Zest for decoration

Method
 

Step-by-Step Instructions
  1. Combine blueberries, sugar, and gelatin in a saucepan. Heat until simmering, then remove and refrigerate in dome molds until set.
  2. Blend cottage cheese and lemon juice until smooth. Fold in whipped cream, chill for 30 minutes.
  3. Preheat oven to 350°F (175°C). Mix flour, eggs, and baking powder, bake for 25-30 minutes, cool and cut into rounds.
  4. Layer sponge, blueberry jelly, and lemon mousse in dome molds, refrigerate for at least 2 hours.
  5. Whisk blueberry juice and cornstarch in a saucepan. Cook until thickened, glaze the domes, and chill to set.
  6. Remove domes from molds, decorate with flowers and lemon zest, serve chilled.
