For the Protein
  • 300 grams Beef Opt for tender cuts; chicken or tofu can be substitutes.
For the Vegetables
  • 1 cup Carrots Sliced.
  • 1 cup Bell Peppers Any color, sliced.
  • 2 cups Spinach Can substitute with kale.
For the Seasoning
  • 4 tablespoons Soy Sauce Low-sodium for healthier option.
  • 2 tablespoons Sesame Oil Can substitute with olive oil.
  • 4 stalks Green Onions Chopped.
  • 1 clove Garlic Optional, fresh or powdered.

Method
 

Step by Step Instructions
  1. Soak the sweet potato glass noodles in hot water for about 30 minutes. Then drain and set aside.
  2. Heat a tablespoon of sesame oil in a large skillet or wok. Add your choice of protein until browned and fully cooked, about 5 to 7 minutes. Remove and keep warm.
  3. In the same skillet, add more sesame oil if needed, then stir-fry sliced carrots and bell peppers for 3 to 5 minutes. Add spinach towards the end.
  4. Return the protein to the skillet with the vegetables. Add the noodles, mixing well for a thorough combination.
  5. Pour in soy sauce, adjusting to taste. Optionally add sugar and more sesame oil. Stir-fry for another 2-3 minutes until heated through.
  6. Sprinkle chopped green onions on top before serving warm.
