Step-by-Step Instructions
  1. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, cook for 6-8 minutes on each side until golden brown. Remove and let rest.
  2. In a large pot, boil water with salt. Add fettuccine noodles and cook 10-12 minutes until al dente. Reserve a cup of pasta water. Drain and set aside.
  3. In the same skillet, melt butter over medium heat. Add garlic and sauté for 1-2 minutes. Stir in heavy cream and bring to a simmer.
  4. Whisk in Parmesan cheese until melted. If too thick, add reserved pasta water to adjust consistency. Season the sauce.
  5. Add fettuccine noodles to the sauce and toss gently to coat. If needed, add more pasta water for creaminess.
  6. Slice chicken and place on top of fettuccine. Garnish with parsley and extra Parmesan. Serve warm.
