  • 1 package Puff Pastry Store-bought for convenience
  • 1 large Egg For egg wash; can use flax egg for vegan
For the Béchamel
  • 2 tablespoons Butter Can substitute with olive oil
  • 2 tablespoons Flour Regular all-purpose or gluten-free
  • 1 cup Milk Whole milk preferred; almond milk for dairy-free
For the Filling
  • 1 cup Spinach Fresh or properly drained frozen
  • 1 cup Ham Turkey ham as substitute, or omit for vegetarian
  • 1 cup Cheese Swiss cheese standard; mozzarella or cheddar as alternatives

Method
 

Preparation
  1. Cut the chilled puff pastry sheets into 5-inch squares and refrigerate.
  2. Melt butter in a medium saucepan, whisk in flour and salt to create a roux.
  3. Gradually add warm milk, whisk until thickened to a creamy consistency.
  4. Mix in spinach, ham, and half of the cheese. Let cool slightly.
  5. Spoon filling onto pastry squares, fold to seal with pressure.
  6. Whisk the egg for egg wash and brush over pastry surfaces.
  7. Preheat oven to 400°F (200°C). Bake for 20 minutes until golden brown.
  8. Allow to cool for 5 minutes on a wire rack before serving.
