- Preheat your oven to 350°F (175°C). Line muffin tin with paper liners or grease it.
- In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, combine Greek yogurt, brown sugar, eggs, and vanilla extract. Whisk until smooth.
- Pour the wet mixture into the dry ingredients and fold together until just combined.
- Fold in diced apples and optional oats or nuts.
- Fill muffin tins about ¾ full with batter and sprinkle on oats or nuts if desired.
- Bake in preheated oven for 18-22 minutes until golden brown and a toothpick comes out clean.
