Method

Step-by-Step Instructions for Apple Butter Grilled Cheese
  1. Heat 1 teaspoon of butter in a skillet over medium heat. Sauté finely chopped shallots and fresh thyme for about 3-4 minutes until translucent and fragrant. Set aside.
  2. Spread a generous layer of apple butter on one side of each slice of bread. On one slice, layer sautéed shallots, thinly sliced apples, and shredded alpine-style cheeses. Cap with the second slice, apple butter side down.
  3. In a small bowl, whisk together one egg and a splash of milk until combined. Brush egg wash over the assembled sandwich.
  4. Reheat skillet over medium heat, add another teaspoon of butter and melt completely before adding the sandwich.
  5. Place the sandwich in the skillet, egg side down. Brush the top side with remaining egg wash and cook for about 5 minutes until golden-brown.
  6. Flip the sandwich over and add another teaspoon of butter. Cover the skillet and cook for an additional 3-5 minutes until heated through and cheese is melted.
  7. Remove from skillet, let rest for a minute, cut in half, and serve warm.
