Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Cream together unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add eggs one at a time followed by vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually combine dry ingredients with the wet mixture, mixing until just blended.
  6. Portion out the dough on the baking sheet, spacing 2 inches apart.

  10. Spread cream filling on half of the cookies and sandwich with the remaining cookies.
