  • 1 cup Red Enchilada Sauce Green enchilada sauce can be used
  • 1 cup Oaxaca Cheese / Mexican Cheese / Monterey Jack Any melty cheese you love
For the Tacos
  • 8 pieces Corn Tortillas Warm before folding
  • 2 tablespoons Olive Oil For brushing tortillas

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C). Gather all ingredients.
  2. In a large skillet, brown the ground beef over medium-high heat for 5 to 7 minutes. Stir in taco seasoning and enchilada sauce; simmer for 2 minutes.
  3. Warm corn tortillas by wrapping them in a damp paper towel and microwaving for 30 to 60 seconds.
  4. Brush one side of each tortilla with olive oil and place oiled-side down on a baking sheet.
  5. On each tortilla, layer cheese, the beef mixture, and then another sprinkle of cheese. Gently fold into taco shape.
  6. Bake assembled tacos in the oven for about 16 minutes until golden brown and crispy.
  7. Let the tacos cool for about 3 minutes before serving with your favorite toppings.
