Ingredients
  

For the Eggrolls
  • 12 pieces Eggroll wrappers Check the refrigerated section of supermarkets
  • 8 oz Cream cheese Substitute with Neufchâtel for a lighter option
  • 1 cup Shredded cheddar cheese Use pepper jack for an extra kick if desired
  • 1 cup Shredded mozzarella cheese Monterey Jack works too for a milder flavor
  • 6 slices Chopped cooked bacon Ensure bacon is crispy for the best results
  • 2 each Jalapeños Finely chopped; remove seeds for mild heat
  • 1 tbsp Ranch seasoning Feel free to use homemade ranch seasoning
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Black pepper
For Frying
  • 1 cup Olive oil Heat to medium before adding eggrolls

Method
 

Preparation
  1. Begin by laying the eggroll wrappers flat on a clean surface in a diamond shape.
  2. In a mixing bowl, combine the cream cheese, shredded cheddar, shredded mozzarella, chopped cooked bacon, finely chopped jalapeños, ranch seasoning, garlic powder, onion powder, and black pepper.
  3. Using a spoon, place a generous spoonful of the filling onto the center of each eggroll wrapper.
  4. Fold the bottom point of the wrapper over the filling, tucking it in tightly.
  5. In a large skillet, pour enough olive oil to cover the bottom of the pan generously.
  6. Carefully add the prepared eggrolls to the hot oil in batches to avoid overcrowding the pan.
  7. Once fried, use a slotted spoon to remove the eggrolls from the skillet.
  8. Allow them to cool slightly for a few minutes before serving.
  9. Serve fresh and hot with your favorite dipping sauce.
