  • 4 cloves Garlic minced
  • 4 cups Vegetable or Chicken Broth
  • 1 cup Heavy Cream or coconut cream for dairy-free

Method
 

Preparation
  1. Chop one medium onion and four cloves of garlic, and set them aside.
  2. Measure two cups of roasted red peppers, four cups of broth, one cup of heavy cream, and eight ounces of gouda cheese.
Cooking
  1. In a large pot, drizzle two tablespoons of olive oil and heat over medium heat.
  2. Add the chopped onion and sauté for about five minutes until translucent.
  3. Follow with minced garlic and stir for an additional minute.
  4. Stir in the roasted red peppers and broth, then bring to a gentle simmer.
  5. Cook for about ten minutes to let flavors meld.
  6. Remove from heat and blend until silky smooth.
  7. Return to heat, stir in Gouda cheese until melted.
  8. Slowly add in the heavy cream until desired creaminess is reached.
  9. Adjust seasoning with salt and pepper, then serve hot, optionally topped with fresh herbs.
