  • 4 slices lean bacon cooked and chopped
  • 2 tablespoons chives or green onion, finely chopped
  • 1 teaspoon dill adjust to taste
  • 2 large hard-boiled eggs optional, sliced
For the Dressing
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt adjust to taste
  • 1 teaspoon black pepper adjust to taste

Preparation Steps
  1. Begin by dicing or shredding your large cooked chicken breasts into bite-sized pieces and place them in a mixing bowl.
  2. Carefully peel, pit, and slice the ripe avocados into bite-sized pieces and add them to the mixing bowl.
  3. Add in the sweet corn, crispy chopped bacon, and finely chopped chives, then stir the mixture carefully.
  4. In a separate bowl, combine the freshly squeezed lemon juice, extra virgin olive oil, sea salt, and black pepper, and whisk until well blended.
  5. Drizzle the dressing over the chicken and avocado mixture, gently toss until all ingredients are well coated.
