Preparation Steps
- Begin by dicing or shredding your large cooked chicken breasts into bite-sized pieces and place them in a mixing bowl.
- Carefully peel, pit, and slice the ripe avocados into bite-sized pieces and add them to the mixing bowl.
- Add in the sweet corn, crispy chopped bacon, and finely chopped chives, then stir the mixture carefully.
- In a separate bowl, combine the freshly squeezed lemon juice, extra virgin olive oil, sea salt, and black pepper, and whisk until well blended.
