  • 1 teaspoon Sea salt
  • 1 teaspoon Black pepper

  • 1/2 cup Additional fresh cranberries For garnishing.
  • 1 tablespoon Orange zest For garnishing.

Method
 

Step-by-Step Instructions
  1. In a food processor, combine fresh cranberries, honey, brown sugar, olive oil, balsamic vinegar, minced garlic, orange zest, and juice. Blend until smooth.
  2. Place the chicken thighs into a zip-lock bag and pour the marinade over them. Seal tightly and marinate in the refrigerator for at least 2 hours or overnight.
  3. Preheat your oven to 375°F (190°C). Lightly grease your roasting pan.
  4. Remove the marinated chicken from the bag and place it in the greased roasting pan. Pour the remaining marinade over the chicken and scatter fresh cranberries. Bake for 25-30 minutes until cooked through.
  5. Mix a bit of honey with olive oil and brush over the baked chicken. Broil on high for 2-3 minutes.
  6. After broiling, let the chicken rest for 10 minutes. Garnish with fresh cranberries and orange zest before serving.
