- In a food processor, combine fresh cranberries, honey, brown sugar, olive oil, balsamic vinegar, minced garlic, orange zest, and juice. Blend until smooth.
- Place the chicken thighs into a zip-lock bag and pour the marinade over them. Seal tightly and marinate in the refrigerator for at least 2 hours or overnight.
- Preheat your oven to 375°F (190°C). Lightly grease your roasting pan.
- Remove the marinated chicken from the bag and place it in the greased roasting pan. Pour the remaining marinade over the chicken and scatter fresh cranberries. Bake for 25-30 minutes until cooked through.
- Mix a bit of honey with olive oil and brush over the baked chicken. Broil on high for 2-3 minutes.
- After broiling, let the chicken rest for 10 minutes. Garnish with fresh cranberries and orange zest before serving.
