For the Soup Base
  • 1 pound Italian sausage can swap with ground turkey or chicken
  • 1 tablespoon Olive oil substitute with vegetable oil if needed
  • 1 Onion diced, yellow or white preferred
  • 3 Garlic cloves minced, fresh preferred
  • 2 Carrots chopped
  • 1 cup Butternut squash diced
  • 6 cups Chicken broth can use vegetable broth for vegetarian version
For the Tortellini
  • 9 ounces Cheese tortellini can replace with ravioli or gnocchi
For the Finish
  • 2 cups Baby spinach can substitute with Swiss chard or kale
  • 1 teaspoon Dried thyme fresh thyme can be used
  • to taste Salt
  • to taste Pepper
  • 1 cup Grated Parmesan cheese substitute with Pecorino Romano if desired

Method
 

Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium heat. Add Italian sausage, breaking it up as it cooks, and sauté for about 5-7 minutes until browned.
  2. Add diced onion, minced garlic, chopped carrots, and diced butternut squash. Sauté for about 5 minutes until the onion is translucent.
  3. Pour in the chicken broth and add dried thyme. Bring to a boil, then reduce to a simmer. Simmer uncovered for about 15 minutes until vegetables are tender.
  4. Stir in the cheese tortellini and cook according to package instructions for about 5-7 minutes.
  5. Fold in baby spinach and cook for an additional 1-2 minutes until wilted.
  6. Season with salt and pepper to taste. Ladle into bowls and sprinkle with grated Parmesan cheese before serving.
