- Preheat your oven to 375°F (190°C). Gather ingredients and prepare your baking dish.
- Melt 2 tablespoons of butter and 2 tablespoons of olive oil in a skillet over medium heat. Add sliced onions and sauté for 15–20 minutes until caramelized.
- Add minced garlic for the last 2 minutes of sautéing. Stir until fragrant.
- In a mixing bowl, combine heavy cream, beef broth, Worcestershire sauce, dried thyme, salt, and black pepper. Whisk until smooth.
- Grease a 9x13-inch baking dish. Layer the sliced potatoes and onions tightly, finishing with a top layer of potatoes.
- Pour the cream mixture evenly over the layered potatoes and onions.
- Cover the dish tightly with aluminum foil and bake for 45 minutes.
- Remove the foil and sprinkle Gruyere and Parmesan cheese on top. Bake uncovered for an additional 15–20 minutes until golden brown.
