  • 1 lb Beef Tenderloin Aim for a cut with minimal silver skin.
For the Stuffing
  • 2 cups Breadcrumbs Gluten-free breadcrumbs can be substituted.
  • 4 cloves Garlic Finely diced.
  • 1 medium Onion Chopped, shallots are a good substitute.
  • 1/2 cup Butter Can substitute with olive oil for dairy-free.
  • 1/4 cup Parsley Chopped, can substitute with thyme or rosemary.
Optional Add-Ins
  • 1 cup Mushrooms Sautéed.
  • 1/2 cup Cheese Parmesan or creamy cheese for richness.

Method
 

Directions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine breadcrumbs, garlic, onion, melted butter, and parsley. Mix thoroughly.
  3. Trim any silver skin and slice the beef tenderloin lengthwise to create a flat piece.
  4. Spread the stuffing mixture evenly over the beef.
  5. Roll the tenderloin tightly and secure with butcher’s twine at 1-inch intervals.
  6. Season the exterior with salt and pepper and place in a roasting pan with a wire rack.
  7. Roast for 50 to 70 minutes, checking for a minimum internal temperature of 145°F (63°C).
  8. Remove from oven and let the meat rest under foil for 10 to 20 minutes.
  9. Slice and serve on a platter, revealing the stuffing.
