Step‑by‑Step Instructions for Chewy Brookies
  1. Preheat your oven to 160°C (320°F) for a fan oven, or 170°C (338°F) for a conventional oven. Line a baking tray with parchment paper.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth, about 5 minutes. Mix in vanilla extract.
  3. In a separate bowl, whisk eggs, caster sugar, and demerara sugar for about 5 minutes until light and fluffy.
  4. Sift and whisk together plain flour, cocoa powder, baking powder, and salt. Fold in chocolate chips.
  5. Gently fold the melted chocolate mixture into the whipped eggs and sugars.
  6. Add the dry ingredients to the chocolate-egg mixture and fold gently until just combined.
