  • 3 medium Potatoes, peeled and diced Yukon gold or russet potatoes preferred
  • 1 tsp Salt adjust to taste

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add 1 pound of ground beef, breaking it apart with a spatula, and cook for about 5-7 minutes until fully browned.
  3. Stir in 1 chopped onion and 2 minced garlic cloves, sauté for 3-4 minutes until onions are translucent.
  4. Add 3 diced potatoes, along with 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika, and 1/2 teaspoon dried oregano; mix well.
  5. Pour in 1/2 cup of beef broth, cover the pan with a lid, reduce heat to low, and let it simmer for 20-25 minutes.
  6. Once potatoes are tender, remove the lid and sprinkle 1 cup of shredded cheddar cheese evenly over the top, cover again and cook for 2-3 minutes.
  7. Uncover and sprinkle with 1 tablespoon of chopped fresh parsley before serving.
