Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. In a medium bowl, combine the pumpkin, cheddar cheese, salt, chili powder, and paprika until smooth.
  3. Spread butter on one side of each slice of bread.
  4. Lay four slices of bread on a baking sheet, butter side down and fill with half of the pumpkin mixture.
  5. Sprinkle arugula on top of the filling on each sandwich.
  6. Spread remaining filling over the arugula and top with the remaining slices of bread, butter side up.
  7. Bake for 6-8 minutes until the tops are golden brown.
  8. Flip each sandwich and return to the oven for an additional 6 minutes until crispy and bubbling.
