  • 1 cup cheddar cheese grated
  • 1 cup buttermilk or milk + lemon juice/vinegar

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine all-purpose flour, baking soda, and salt.
  3. Add the chopped fresh chives, thyme, rosemary, sage, and grated cheddar cheese to the flour mixture.
  4. Pour in the buttermilk and mix until just combined.
  5. Flour a clean surface lightly and knead the dough gently for about 30 seconds.
  6. Press the dough into a 7-inch circle and place it onto a floured baking sheet.
  7. Using a sharp knife, score a deep cross into the top of the dough.
  8. Bake for 15 minutes, then reduce the temperature to 375°F (190°C) and bake for another 30-35 minutes.
  9. Remove from the oven, wrap in a clean tea towel, and let cool for 10-15 minutes before slicing.
