  • 1 Tbsp Dijon Mustard
  • 1 pinch Cayenne Pepper to taste
  • 1 tsp Garlic Powder optional

Method
 

Preparation Steps
  1. Preheat oven to 400°F (200°C) and spread frozen hash browns on a baking sheet. Bake for about 20 minutes until golden and crispy.
  2. In a skillet over medium heat, add olive oil and cook bacon for 6-8 minutes until crispy. Drain and crumble.
  3. Melt butter in the skillet, crack eggs and cook to desired doneness. Set aside.
  4. Whisk egg yolks, Dijon mustard, and white wine vinegar in a heatproof bowl over simmering water until lightened (3-5 minutes). Add melted butter gradually.
  5. Season hollandaise with lemon juice, cayenne, and garlic powder. Keep warm off heat.
  6. Layer baked hash browns, top with eggs and crumbled bacon. Add cheeses on top.
  7. Pour prepared gravy over layered ingredients and drizzle with hollandaise. Serve immediately.
