- In a mixing bowl, combine bite-sized pieces of chicken with olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, sea salt, and black pepper. Toss well to ensure all the chicken is evenly coated. Let sit for about 10 minutes.
- Heat a large frying pan over medium-high heat and add the marinated chicken. Cook for approximately 6 minutes until golden brown and fully cooked through. Remove from pan and set aside.
- Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper. Place flatbreads on the tray and spread BBQ sauce evenly over each.
- Distribute the cooked chicken across the sauced flatbreads, sprinkle mozzarella cheese, and top with red onion and capsicum.
- Bake in the preheated oven for 8–10 minutes until cheese is bubbling and edges are golden and crispy.
- Remove from oven, let cool for a minute, garnish with chopped cilantro, slice into quarters, and serve immediately.
