  • 1 large boneless, skinless chicken breast cut into bite-sized pieces
  • 1 tbsp olive oil Any cooking oil can be used
  • 1 tsp sweet paprika Substitute with smoked paprika for a deeper flavor
  • ½ tsp smoked paprika Optional but recommended for enhanced flavor
  • 1 tsp garlic powder Fresh garlic can be used as a substitute
  • 1 tsp onion powder Can be omitted if fresh onion is used as a topping
  • ½ tsp sea salt flakes Regular salt can be used as well
  • ½ tsp black pepper Freshly cracked
For the Base
  • 4 pieces flatbreads Turkish bread recommended; substitute with pita, naan, or homemade flatbreads
For the Toppings
  • 60 ml BBQ sauce Homemade or store-bought options are suitable
  • 150 g mozzarella cheese Shredded; substitute half with cheddar for a different flavor
  • 1 small red onion Finely sliced; can replace with shallots for a milder taste
  • 1 small capsicum (bell pepper) Finely sliced; swap with jalapeños for heat or zucchini for a different texture
  • 1 tbsp cilantro Freshly chopped; omit if not preferred

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine bite-sized pieces of chicken with olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, sea salt, and black pepper. Toss well to ensure all the chicken is evenly coated. Let sit for about 10 minutes.
  2. Heat a large frying pan over medium-high heat and add the marinated chicken. Cook for approximately 6 minutes until golden brown and fully cooked through. Remove from pan and set aside.
  3. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper. Place flatbreads on the tray and spread BBQ sauce evenly over each.
  4. Distribute the cooked chicken across the sauced flatbreads, sprinkle mozzarella cheese, and top with red onion and capsicum.
  5. Bake in the preheated oven for 8–10 minutes until cheese is bubbling and edges are golden and crispy.
  6. Remove from oven, let cool for a minute, garnish with chopped cilantro, slice into quarters, and serve immediately.
