Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add chicken breasts to the skillet. Cook for 6-8 minutes, turning occasionally until golden brown on all sides.
  4. Pour in chicken broth, bring to a simmer. Stir in heavy cream, Dijon mustard, thyme, rosemary, salt, and pepper. Simmer for about 5 minutes.
  5. Stir in shredded cheddar cheese until melted and smooth.
  6. In a mixing bowl, combine cooked rice with the creamy chicken mixture.
  7. Grease a 9x13 inch casserole dish and pour the mixture into it, spreading evenly.
  8. In a bowl, mix breadcrumbs, grated Parmesan cheese, and melted butter. Sprinkle over the casserole.
  9. Bake in the preheated oven for 25-30 minutes until golden brown and bubbling.
  10. Let cool slightly, garnish with fresh parsley, and serve warm.
