  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 large Eggs the stars of the dish
For the Topping
  • 2 tablespoons Everything Bagel Seasoning for added flavor
  • 2 tablespoons Fresh Chives for garnish

Method
 

Step‑by‑Step Instructions
  1. Thaw the frozen puff pastry sheets for about 30-40 minutes until pliable.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Cut the thawed pastry into eight squares and score a smaller square inside each piece.
  4. Brush the edges of each pastry square with a beaten egg and sprinkle with bagel seasoning.
  5. Bake the pastry squares for about 12-15 minutes until golden brown.
  6. Sauté finely chopped shallots and minced garlic in olive oil for 3-4 minutes.
  7. Add the fresh spinach, sauté until wilted, then combine with cream cheese, heavy cream, Parmesan, nutmeg, salt, and pepper.
  8. Fill the pastry wells with the creamy spinach filling.
  9. Crack a large egg into each filled well.
  10. Bake again for 10-15 minutes until the egg whites are set.
  11. Garnish with fresh chives and serve immediately.
