- Preheat your oven to 180°C (350°F). Grease your baking dish with olive oil.
- Season the cod fillets with salt and pepper on both sides.
- Heat olive oil in a skillet over medium heat. Sauté the chopped onion for 3-4 minutes until translucent.
- Add minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
- Pour in coconut milk, lemon juice, and lemon zest. Simmer for 3-5 minutes.
- Place seasoned cod in the baking dish and pour sauce over it.
- Bake for 20-25 minutes until the cod flakes easily with a fork.
- Let it rest for a couple of minutes before serving. Garnish with fresh herbs.
