Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F). Grease your baking dish with olive oil.
  2. Season the cod fillets with salt and pepper on both sides.
  3. Heat olive oil in a skillet over medium heat. Sauté the chopped onion for 3-4 minutes until translucent.
  4. Add minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
  5. Pour in coconut milk, lemon juice, and lemon zest. Simmer for 3-5 minutes.
  6. Place seasoned cod in the baking dish and pour sauce over it.
  7. Bake for 20-25 minutes until the cod flakes easily with a fork.
  8. Let it rest for a couple of minutes before serving. Garnish with fresh herbs.
