Preparation
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a springform pan and bake for 10-12 minutes until lightly golden.
- Let the crust cool and lower the oven temperature to 275°F (135°C).
- Beat cream cheese until smooth. Gradually add Greek yogurt, granulated sugar, and vanilla. Incorporate eggs one at a time, mixing on low.
- Pour the cheesecake batter over the cooled crust.
- Toss sliced apples with brown sugar and cinnamon. Layer over the cheesecake batter.
- Mix flour, rolled oats, brown sugar, and melted butter until crumbly. Sprinkle over the apples.
- Bake for 1.5 to 2 hours or until the center reaches 150°F (65°C).
- Turn off the oven and leave the cheesecake inside with the door ajar for an hour.
- Cool to room temperature, then chill in the refrigerator overnight.
- When ready to serve, drizzle with salted caramel sauce if desired.
