Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a springform pan and bake for 10-12 minutes until lightly golden.
  3. Let the crust cool and lower the oven temperature to 275°F (135°C).
  4. Beat cream cheese until smooth. Gradually add Greek yogurt, granulated sugar, and vanilla. Incorporate eggs one at a time, mixing on low.
  5. Pour the cheesecake batter over the cooled crust.
  6. Toss sliced apples with brown sugar and cinnamon. Layer over the cheesecake batter.
  7. Mix flour, rolled oats, brown sugar, and melted butter until crumbly. Sprinkle over the apples.
  8. Bake for 1.5 to 2 hours or until the center reaches 150°F (65°C).
  9. Turn off the oven and leave the cheesecake inside with the door ajar for an hour.
  10. Cool to room temperature, then chill in the refrigerator overnight.
  11. When ready to serve, drizzle with salted caramel sauce if desired.
