- Preheat a large skillet or griddle over medium heat for about 3-4 minutes.
- Spread softened unsalted butter generously on one side of each slice of sourdough bread and set aside, buttered side up.
- Flip two slices of bread to expose the unbuttered side and spread apple butter evenly across each slice.
- Layer slices of Brie cheese on top of the apple butter, add thinly sliced apples and a sprinkle of fresh thyme.
- Place the remaining bread slices on top, buttered sides facing outward, and gently press down.
- Cook the sandwiches in the preheated skillet for about 3-4 minutes on each side, pressed gently for even browning.
- Once crispy and melted, slice the sandwiches in half and serve immediately.
