Ingredients
  

For the Chicken
  • 4 pieces chicken thighs bone-in, skin-on for best flavor
  • 4 cloves garlic freshly minced
  • ½ cup Parmesan cheese grated
  • 2 tablespoons olive oil extra virgin for more flavor
  • 1 teaspoon Italian seasoning dried or fresh
  • 1 teaspoon salt adjust according to taste
  • ½ teaspoon black pepper freshly ground
For the Potatoes
  • 1 pound baby potatoes Yukon Gold or red can be used
  • 1 teaspoon paprika smoked paprika can also work
  • ¼ cup parsley chopped fresh for garnish

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and halve the baby potatoes, then toss them with olive oil, paprika, salt, and pepper in a large bowl.
  3. In a separate bowl, mix minced garlic, olive oil, Italian seasoning, salt, and black pepper. Rub this mixture all over the chicken thighs.
  4. Spread the seasoned baby potatoes on the prepared baking sheet and roast for about 20 minutes.
  5. After 20 minutes, add the seasoned chicken thighs to the baking sheet with the potatoes.
  6. Sprinkle grated Parmesan cheese over the chicken thighs.
  7. Return to the oven and bake for an additional 25-30 minutes, until the chicken is cooked to an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
  8. Let rest for 5 minutes, then sprinkle with fresh chopped parsley before serving.
